A Hole In One

a recipe that serves 6 by me

Ingredients:

6 slices low sodium ham or deli ham, folded in half
3 slice American cheese or your favorite, each slice divided into quarters
6 large eggs
dash ground black pepper

Direction:

1. Preheat the oven to 425 degrees. Spray 6 muffin cup tin with Pam.
2. Place 1 folded slice of ham in each of the muffin cups, doubling each slice over, making it a cup in the individual muffin tin.
3. Place 2 quarters on top of the bottom of the ham reinforcing the bottom of the ‘ham cup’.
4. Place one raw egg in each ‘ham cup’ and sprinkle each egg lightly with pepper.
5. Bake about 20 minutes or to desired degree of cooked. Carefully remove the ham and egg cups using a spoon to slide under the ham to scoop in up, use a fork to help guide it onto a plate.

Notes:

Can also scramble the eggs using a dash of milk scrambled in with the egg (only need 5 eggs for 6 ham and egg cups). If adding onions, peppers or bacon bits in scrambled egg, consider you may need l egg less. Serves nice with 2 slices of light bread toasted or 2 slices of light French Toast.
