Apricot Chicken

a recipe that serves 2-4 by me

Ingredients:

4 boneless, skinless chicken breast halves
1/3 cup apricot preserves
1/3 cup of lite sour cream
2 heaping teaspoons of deli or brown mustard or Dijonnaise
pepper to taste

Directions:

1. Preheat oven to 375 degrees.
2. Arrange chicken breast, single layer on a glass baking dish sprayed with pam.
3. Bake chicken uncovered for 40 minutes, or until chicken is just about cooked.
4. Mix apricot, sour cram, mustard and pepper while chicken is cooking.
5. Coat each piece completely and bake chicken for another 10 minutes. Mix should be bubbly and browning.
