Avocado Humus

a recipe that serves 6-8 by me

Ingredients:

1 cans (15 oz) garbanzo beans, drained, rinsed
1 small avocado (Haas, Persea americana) halved, peeled, pit removed, chopped into 1/2″ pieces
1 garlic clove, chopped
1/2 teaspoon white pepper
1/4 teaspoon coarse salt
1 teaspoons ground cumin
3 tablespoons olive oil
2 tablespoons lemon juice
1 tablespoon water
1 tablespoon Recaito, Cilantro cooking base

Directions:

1. In a small dish blend salt, pepper and cumin.
2. In a blender, food processor or medium food chopper add half of the beans, 1 tablespoon of oil. Blend on low. Repeat, add the balance of the beans, 1 tablespoon of oil and 1 tablespoon of lemon juice, blend on low.
3. Gradually add garlic, avocado, oil and water blending on low.
4. Add small dish of spice, 1 tablespoon of lemon juice and blend on low. Add Recaito and blend on high until desired humus consistency is obtained.

Note:

Serves great with crackers like Special K (17 crackers for 90 calories) or pita bread or pita chips.
