Balsamic Roasted Pork Loin

Ingredients:
3 lbs. Boneless Pork Tenderloin
2 tablespoons steak rub*
1/2 cup balsamic vinegar
1/2 cup olive oil
5-6 garlic cloves cut in halves
Directions:
1. Make marinade: mix steak rub and vinegar, add oil. Knife stab pork on all sides and stuff garlic cloves in holes and place pork loin in 2 gallon size zip lock bag. Pour marinade over pork loin, squeeze air out and seal bag. Marinade in fridge for 4 hrs-overnight, turn every 2 hrs. Keep bag in a bowl to avoid messy leakage.
2. Preheat oven to 375 degrees, put pork in pam sprayed glass pan and pour marinade over it and make sure it gets under the pork loin.
3. Begin baking process, cooking time will be 20 minutes per pound and the pork loin will be turned and basted every 20 minutes.
4. Remove meat from oven and let stand to set for 10 minutes before slicing into 1/4″-½” slices and spoon marinade over meat and serve. (Warm sauce if cools before serving over meat.)
