Banana Bread

a recipe that serves 6 by Mrs. Hockmeyer @ simplyrecipes.com

Ingredients:

3 to 4 ripe bananas, smashed and mashed using a spatula
1/3 cup melted butter
1 cup white sugar or splenda
1 egg beaten
1 teaspoon vanilla extract
1 teaspoon baking soda
pinch of salt (a real pinch)
1 1/2 cups flour
optionals: 1 1/2 teaspoon nutmeg, 2/3 cup of walnuts

Directions:

1. pam or butter a 4×8 loaf pan and preheat oven to 350 degrees.
2. with spatula mix melted butter with bananas in large bowl.
3. add the sugar, egg and vanilla (nutmeg and walnuts) and mix with spatula.
4. sprinkle in baking soda and salt over mix and mix in well with spatula.
5. add last flour and mix in well.
6. pour mixture into loaf pan for 55 min to 65 min. bread will be golden browned when done and will spring back when touched.
7. cool for 10 min. on a rack before removing from pan and let cool another 10 min before serving.

Notes:

*With this recipe please do not use a mixer or food processor or mixer. All done by hand.
