Boneless Pork Chops in Balsamic Vinegar

a recipe that serves 2 by me

Ingredients:

1 lb boneless pork chops, approximately 2-4 pieces, 1/2-1″ thick
2 tablespoons olive oil or Canola oil
1/2 cup all-purpose flour
2 teaspoon garlic powder
1/4 teaspoon ground black pepper
1/2 cup chicken broth
1/4 cup balsamic vinegar
2 teaspoons grated lemon rind

Directions:

1. Place the flour, garlic and pepper on a plate and mix. Dredge pork chop through mix and coat on both sides.
2. Heat the oil in a large skillet over medium-high heat. Cook the pork chops in the hot oil until browned on both sides, 4-5 minutes each side.
3. Pour in the balsamic vinegar and chicken broth, mix and bring to a boil for 2 minutes. Then reduce heat to medium and simmer until the pork chop center is no longer pink, 4 to 5 minutes each side.
4. Remove the pork chops to a deep dish, then stir the lemon rind in and simmer the sauce for another 3 minutes and pour over the pork chop. Serve hot.

Note:

Optional: add drained capers, approximately 1 1/2 heaping tablespoon when adding vinegar and chicken broth
