Broccoli Soup
a recipe that serves 4 by
Ingredients:
2 cups water
4 cups fresh broccoli heads (crowns)
3 stalks celery, chopped
2 carrots, chopped
1/2 cup chopped onion
6 tablespoons butter or substitute margarine or 1/4 cup Canola oil
6 tablespoons all-purpose flour
4 cups/2 small cups low fat, low salt chicken broth
2 cups 2% milk
1 tablespoons parsley
1/2 teaspoon of salt
1 teaspoon of onion powder
1/2 teaspoon garlic powder
pepper to taste
Directions:
1. In soup pot, bring water to boil and add broccoli, celery and carrots and boil for 5 min. mixing 2 times- keep covered between mixing. Drain veggies and set aside, discard water and chop up broccoli.
2. In soup pot, saute butter and onion until tender and stir in flour stirring to make a smooth paste.
3. Gradually add the broth and milk stirring constantly. Bring to a boil and boil for 1 minute.
4. Add veggies and remaining spices bring to a boil, and reduce heat to a simmer and cover. Let simmer for 30 to 40 minutes or until veggies are tender.
