Cabbage Soup

a recipe that serves 8-12 by dimitri

Ingredients:

3 tablespoons olive oil
1/2 onion chopped
3-4 gloves garlic minced
4 quarts of water
8 teaspoons chicken bouillon granular
1/4 teaspoon black pepper
1 head of cabbage (green or purple- will turn soup purple, but is sweeter), cored and coarsely chopped
1 can of diced tomatoes, rinsed and drained or l large fresh tomato, diced
1/2 teaspoon onion and garlic powder
1 can low sodium chicken broth

Directions:

1. In a large pot sprayed with pam, heat oil over medium heat, stir in onion and garlic and cook until onion is transparent, about 5 min.
2. Stir in water, granular bouillon, pepper, onion and garlic powder, cover bring to a boil.
3. Add tomatoes and cabbage, let simmer 15 min or until cabbage wilts. Cover and return to a boil.
4. Then let simmer with cover slightly ajar for 45 min. stirring often when cabbage is soft. Add the can of broth, stir well and let steep 20 min. before serving.
