Chicken With Artichokes
a recipe that serves 2-3 by
Ingredients:
1lb chicken cutlet cut into 3/4″ strips lengthwise, then cut strips in half
3 teaspoons capers
2 cup of artichokes in oil, drained
1/4 to 1/3 stick of lightly salted butter
1/4-1/2 teaspoon pepper
1/2-3/4 teaspoon garlic powder
Directions:
1. Melt butter in 10″ or 12″ pan on medium-low heat.
2. Add chicken and sprinkle with pepper and garlic powder. Cook until one side of chicken appears to be white and turn chicken pieces over.
3. When chicken appears to be all white, add capers and artichokes, lower heat and let simmer for 20 minutes stirring occasionally. Chicken should be white on inside of pieces when done.
Notes:
Tastes great with rice or mashed potatoes and a light salad.
