Chickpea Salad Open Sandwich

a recipe that serves 2 by me

Ingredients:

1 (19 ounce) can garbanzo beans, drained and rinsed
1/2 stalk celery, preferably the top half with leaves, chopped finely
1/4″ onion slice, chopped finely
2 tablespoon light mayonnaise
1/8 teaspoon black pepper
2 rounds or 4 slices of bread
dash of paprika

Directions:

1. Place chickpeas in a medium but deep bowl and smash with potato masher. Chickpeas should be chunky but all broken. Fluff with fork.
2. Add onion, celery and pepper, mix.
3. Add mayonnaise and mix will.
4. Open rounds and divide mix evenly over all four slices. Sprinkle a touch of paprika on each.

Notes:

Thin slice of tomato go well with these sandwiches just add before putting chickpea salad on bread.
