Corned Beef and Cabbage

Ingredients:
3 1/2 to 4 lbs. of corned beef
1/4 cabbage head per person (1 cabbage head per 4 people)
1 potato per person cleaned and cut into halves
1 carrot per person peeled and cut into 1/3′s
1/3 to 1/2 McCormick Pickling Spice (in the spices aisle at grocery store) – Put the pickling spice in a coffee filter, twist close and tie tightly with thread
1 heaping tablespoon of mustard
Directions:
1. boil a huge pot of water
2. add pickling spice, mustard and meat, lower flame to simmer for 2 hours.
3. after 2 hours, add cabbage.
4. 15 min. later add potatoes.
5. 15 min. later add carrots.
6. 15 min. later, 3rd hour cooking, meat is done (meat should be fork tender).
