Dad’s Mashed Turnips

a recipe that serves 6 by Mz. Gina’s Dad

Ingredients:

2 large turnips
1/2 stick butter
2 teaspoon salt
milk (optional)

Directions:

1. Peel waxy skin off thoroughly. Remove rough end.
2. Carefully cut hard turnips into 1/2″ cubes and place them in a medium to large pot.
3. Cover turnips with water, about an inch to two inches over the top of turnips. Add salt and let soak about 30 minutes or until ready to make.
4. Boil turnips until fork tender, strain and put back into pot, add butter and mash until no lumps exist and desired consistency is obtained; add milk for creamy mashed turnips. Serve hot.

Notes:

For creamy turnips slowly add milk to desired creaminess.
