Fried Flounder or Fluke

a recipe that serves 4 by me

Ingredients:

2 1/2 lbs. fresh flounder fillets or fluke
1 egg
2 tablespoons water
2 cups seasoned bread crumbs
2 teaspoon lemon pepper
1/4″ deep Canola oil in frying pan

Directions:

1. In a flat bowl mix egg and water.
2. In a flat dish mix bread crumbs and lemon pepper.
3. Dip flounder fillet on both sides in egg mix and then through bread crumbs.
4. Heat oil when hot add breaded fillets, turn after 5 minutes. After 4 minutes check to see that fish is white and flakes, not opaque; if white then remove from pan and place on paper towel lined platter to remove excess oil.

Notes:
