Great Northern Bean Soup
a recipe that serves 8-10 by
Ingredients:
1 lb Northern Beans, soaked in water overnight and cleaned
6 cups Lite and low sodium chicken broth
2 cups water
2 tablespoon ketchup
1 can diced tomatoes with liquid
4 carrots, peeled and cut into 3/4″-1″ pieces
1 large and long summer zucchini, cubed in 1/2″ cubes
1 large and long summer yellow squash, cubed in 1/2″ cubes
5 garlic cloves, minced
2 chorizo, casing removed or 1 cup of 1″ cubes of smoked ham
1 ham bone (if you have)
1 tablespoon olive oil
2 teaspoons parsley
1 teaspoon garlic powder
1/4 teaspoon pepper
salt to taste
Directions:
1. In a large stock pot sprayed with Pam, add oil. When hot add garlic and carrots, saute for 2-3 minutes, add chorizo and brown.
2. Add ham bone and tomatoes with liquid, saute for 4 minutes then add beans and mix well.
3. Mix water with ketchup add to pot, then add chicken stock, zucchini, squash, parsley, garlic powder and pepper. Mix well.
4. Bring to a boil, then simmer for 2 hours. Beans should be soft.
