Irish Soda Bread

a recipe that makes 2 breads by Sweety

Ingredients:

6 cups all purpose white flour
1 teaspoon Baking Soda
3/4 cups sugar or Splenda
1 lb ( approximately 2 cups) raisins
3 teaspoons Baking Powder
1 1/2 teaspoon salt
1 quart buttermilk, fat-free or low-fat

Directions:

1. Preheat oven 350 degrees. Hand mix only!
2. Mix all dry ingredients, add in raisins, then mix in buttermilk and divide dough into two portions.
3. Place one dough on lightly floured board knead 10 times, shape rounded and place in lightly greased cookie sheet or low lip pan.
4. Flour a knife and cut a cross into the top.
5. Repeat steps 3 and 4 for second dough.
6. Bake for 45 minutes to one hour, do not brown, done when bottom of loaf sounds hollow when tapped.

Note:

To make 1 bread cut the ingredients in half:
3 cups all purpose white flour
1/2 teaspoon Baking Soda
1/4 plus 1/8 cups sugar or Splenda
1/2 lb ( approximately 1 cup) raisins
1 1/2 teaspoons Baking Powder
3/4 teaspoon salt
1/2 quart (1 pint) buttermilk, fat-free or low-fat
