Kickin’ Meatballs

Ingredients:

4 cloves minced garlic
2 teaspoons dry parsley or chopped fresh
2 teaspoons basil
2 1/2 teaspoons cumin (cumino)
1/2 teaspoon ground black pepper
1/2 cup dry bread crumbs
1 tablespoon dried dillweed (optional – I don’t use)
1 1/2 teaspoon of yellow mustard
2 beaten eggs
3/4 cup crumbled montery pepperjack cheese (if you can not find it crumbled by a block
and cut into 1/4 inch or smaller cubes
1 1/2 lb. ground beef
1/2 large onion cut into thin sliced rings

Directions:

1. In a large bowl combine all the ingredients except for the onions. Mix the ingredients well, making sure that all the cheese is distributed evenly. Roll into 1 1/2 inch balls. (Should have a minimum of 10 balls).
2. Place meatballs in lightly greased skillet- spray with pam or use a tablespoon of oil to grease bottom and side of skillet. Top with onion rings and cover pan. Set heat to medium-low and turn meatballs over after 3 minutes. Then increase heat to medium and continue to cook covered turning every 10 minutes until cooked. Approx. 30 min. Serve immediately.

Notes:

*Optionals: Serving with salad and potato or garlic bread is great..
