Lentil Soup
a recipe that serves 8-10, by
Ingredients:
1 pkg or 1 lb. Lentils soaked overnight, in a lot of water and rinsed in the morning before using
water
3-4 celery stalks finely chopped
1-2 carrots peeled, splint in half and finely chopped
1/2 onion chopped
1 tablespoon Salt Sense Table Salt (33% less sodium)
1/2 teaspoon onion powder
1/4 teaspoon black pepper
1 tablespoon dried parsley
3/4-1 cup olive oil
1 cup of Ditalini, elbow, small shells or pasta
Directions:
1. In large soup pot sprayed with Pam, add clean lentils cover with water. Pot should be 1/3 lentils and 2/3 water.
2. Add carrots, celery, onions, salt , pepper, onion powder and parsley.
3. Cover and bring to a boil, lower and simmer with cover slightly ajar for 1 1/2 hours.
4. Add olive oil, return to a boil, then add pasta cook for about 20 min. to 30 min. more (when pasta is done).
