Meatballs

a recipe that serves 12 or more by Mz. Gina’s Family

Ingredients:

1-1 1/2 pounds lean ground beef
1 1/2 -2 cups of seasoned bread crumbs (see below if you do not have seasoned bread crumbs , like 4c for how to make them)
1 beaten egg
2 teaspoons of garlic powder, if you want to use fresh crushed garlic use 2 cloves and 1 teaspoon of garlic powder
2 teaspoons of onion powder, if you want to use fresh onions, regular onion will do, 1/4 cup of chopped onion and 1 teaspoon of onion powder
* please note we do not use onion or garlic salt use fresh if you do not have powder and double it.
pepper to taste at least 1/4 of teaspoon
2 heaping tablespoons of grated cheese: like Locatelli, Romano or parmasian (this is where your salt is naturally)

Directions:

1. in a large bowl mix ground meat, bread crumbs, egg, garlic, onion, pepper and grated cheese. mix should be paste not dry less bread crumb so only start with 11/2 cups add only if to much meat . once mixed make you balls about 11/2-2 inches round so they cook nice if you feel like the meat is sticking to much to your hands dampen them with water so you can roll nice balls.
2. put oil in frying pan and heat pan and oil to hot. make sure sides of pan are oiled too. place meatballs in hot pan on medium high heat for 2-3 minutes lower heat to medium or medium low keep turning every 4-5 minutes until all sides are browned.
3. when you are not making the gravy you need to cook them fully. throw them in the pot when they are done that you are cooking to heat the gravy in and make the gravy hot with them in it so the gravy takes on a meat flavor on your pasta.

Notes:

*For frying you will need 2 tablespoons of either Canola or light Italian olive oil.
Optional: Seasoned Bread Crumbs
if a container is plain bread crumbs add to the container:
a cupped handful of crushed basil and crushed oregano
2 tablespoons of onion powder and garlic powder
2 teaspoons of ground black pepper, parsley flakes and celery flakes
grated cheese optional
