Mom’s Potato Salad

a recipe that serves 8-10 by Mz. Gina’s Mom

Ingredients:

3 lbs. potatoes boiled, cooled under cold water, peeled, sliced and cover until ready to use
4-6 large eggs, boiled, peeled and chunked, cover until ready to use
2 heaping tablespoons of prepared yellow mustard
2 heaping tablespoons of honey mustard or deli mustard
1 1/2-2 cups of mayonnaise
2 heaping tablespoons of sweet relish (don’t drain relish liquid)
2 heaping tablespoons of India relish (like B&G next to sweet relish, don’t drain relish liquid)
salt and pepper to taste

Directions:

1. Mix all ingredients except potatoes, egg and any optionals using. Let set for a few hours in refrigerator, taste to see if flavor is desired. If adding any flavors let set for an hour and taste again.
2. When desired flavor is obtained, mix in potatoes, egg and any optionals in a large bowl, then add mixed ingredients and stir well. Leave in bowl and stir every now and then. Put in serving tray vefore serving or ready to go, to able better mixing until ready to use.

Notes:

*Optional: Add some diced onion, celery diced or carrots diced.
