Orange Basil Chicken

Ingredients:

1/2 to 3/4 cups orange juice no pulp
1/4 cup Canola oil
2 cloves garlic, minced
1 Tablespoon dried basil
1/2 teaspoon black pepper
4 boneless skinless chicken breast or 8 cut up pieces of chicken

Directions:

1. In a medium bowl mix all ingredients except chicken. Place chicken in larger bowl, poke holes in meat and pour mixture over chicken until all pieces are coated. Refrigerate for at least 4 hours, mixing at least once while refrigerating.
2. Preheat heat oven to 375 degrees and in a large glass baking pan sprayed with pam place all pieces of chicken and pour marinate over it. Cook uncovered for 40 to 50 minutes until chicken is cooked and juices when stabbed run clear.

Note:

If grilling chicken place chicken in a tin sprayed with pam and 1/2 the marinade and cook covered loosely. When half cooked start basting with balance of marinade until almost done.
