Orange Roasted Chicken

a recipe that serves 2-3 by me

Ingredients:

6 chicken thighs
1 1/2 tablespoon Canola oil
1/2 bunch scallions, cut in 1/3 length pieces
1/4 cup pimiento-stuffed green olives, chopped
2/3 cup orange juice
salt and pepper, to taste

Directions:

1. Preheat oven to 375 degrees.
2. Salt and pepper both side of chicken.
3. In a large skillet sprayed with Pam add oil and heat over medium-high until hot. Add chicken skin side down. Brown on both sides, about 5-10 minutes each side.
4. When chicken is browned, skin side up, add scallions, olives, and orange juice to skillet. Bring to a quick boil.
5. Transfer chicken, skin side up, to oven glass pan sprayed with Pam. Pour orange juice, scallions, and olives over the chicken.
6. Cook the chicken uncovered for 40-45 minutes, until chicken is cooked thoroughly.
