Pan Roasted Tomatoes
a recipe that serves 3-4 by
Ingredients:
1 pint grape or cherry tomatoes
1 tablespoon of olive oil
Directions:
1. In a small skillet sprayed with Pam on medium heat, heat oil.
2. Add tomatoes to hot oil and lower heat to medium low. Saute the tomatoes gently not to break them and cook them until just before they are about to burst. Approximately 6 minutes.
3. Serve hot.
Notes:
For a change in flavor add 1-2 leaves of fresh basil or 1/4 teaspoon of dried basil last two minutes of cooking time. When cooked thorough add a splash of balsamic vinegar.
