Parmesan Chicken
a recipe that serves 3-4 by
Ingredients:
2 1/2 lbs. chicken skinless, boneless thighs
1/4-1/3 cup butter or butter substitute
1 cup bread crumbs
1/4 cup grated cheese Parmesan
1/2 teaspoon parsley
1/4 teaspoon basil
1/4 teaspoon oregano
1/8 teaspoon black pepper
1/4-1/2 teaspoon garlic powder
2-3 cloves of garlic, minced powder
Directions:
1. Preheat oven to 425 degrees.
2. In a medium bowl combine minced garlic and melted butter.
3. In another bowl mix bread crumbs, grated cheese, pepper, garlic powder, parsley, basil, oregano and put half of mix on flat dish.
4. Dip chicken in garlic butter mix, then dredge through bread crumb mix use other half of bread crumb mix as needed.
5. Place coated chicken on a 9×13 baking dish sprayed with pam. Try to leave room between each piece. Drizzle remaining garlic butter on coated chicken before baking. Bake uncovered for 60 minutes or until chicken is cooked and juice runs clear.
Note:
In place of chick thighs use 1- 1½ lbs. boneless, skinless chicken breasts cut up into 2″ x 2″ chunks. In place of Parmesan cheese use grated Romano or Locatelli.
