Picnic Macaroni Salad
a recipe that serves 4 by
Ingredients:
1/2 lb/8oz cooked and cooled pasta (small elbows, shells etc.)
1 stalk celery, finely chopped
1/2 small carrot, grated
2 thin slice of onion, finely chopped
3 hard boiled eggs, mashed into small pieces
1/2 cup light mayonnaise
1 tablespoon deli or spicy mustard
1 teaspoon paprika
1/2 teaspoon garlic powder
1 tablespoon fresh parsley
Directions:
1. In a large bowl mix: pasta, onion, celery, carrot and eggs. In a small bowl mix mayonnaise, mustard, garlic powder, pepper, parsley and 1/8 paprika.
2. Add mayonnaise mix to pasta mix and stir well.
3. Sprinkle with remaining paprika over salad and chill for at least 2 hours before serving.
