Poor Man’s Soup
a recipe that serves 4-6 by
Ingredients:
1 Chorizo link, casing removed, divided into small pieces
1 garlic clove, minced
2 1/4″ onion slices, finely diced
1 small celery stalk, finely chopped
1 small carrot, peeled, finely chopped
1 can dice tomatoes, undrained
1 can butterbeans, drained; or any large bean
3/4 cup water
4 cups of chicken stock or low sodium, low fat chicken broth
1 1/2 tablespoons ketchup
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon white pepper
1 cup elbows or any small pasta
Directions:
1. In a large stock pot sprayed with Pam, saute Chorizo until just about fully cooked, then add garlic, onion, celery and carrot. Cook for about 3 minutes, stirring occasionally.
2. Add tomatoes with liquid, cook for 4 minutes, stir occasionally.
3. Stir in beans. Add broth, water, ketchup, garlic powder, onion powder and pepper.
4. Bring to a boil, lower heat to simmer soup with cover slightly ajar for 20 minutes.
5. Raise heat and return soup to a boil, add elbows and cook uncovered until pasta is cooked. Stir often.
6. Cover if not standing immediately.
