Potato Salad By Pam
a recipe that serves 2-4 by
Ingredients:
6 medium red skin potatoes, boiled with skins on
1/2 cup light mayonnaise
1 to 2 capfuls of cider vinegar, using the bottle cap
1/2 small onion, chopped
1 pack of sugar substitute, like Splenda or Sweet ‘n Low
ground black pepper to taste
1/8 celery seed or 1 small inner stalk of celery
Directions:
1. Slice cooled potatoes.
2. In a large bowl combine potatoes, mayonnaise, one capful of cider vinegar, onion, sugar substitute and celery.
3. Add black pepper and depending on taste, if needed use second capful of cider vinegar, and mix well.
