Rice, Beans and Sausage

a recipe that serves 2-4 by me

Ingredients:

1 cup hot cooked Minute Rice
10 – 16 oz of chicken sausage, cooked and cut into 1/4″ slices
1 can (14.5 oz) diced tomato with juice
1 can (15.5 oz) black beans, rinsed
1/2 medium onion, diced
2 cloves of garlic, minced
1/2 teaspoon dried oregano
1/4 teaspoon black pepper

Directions:

1. In a large skillet over medium heat, saute sausage for 5 minutes or until warmed, add onion and garlic, saute until onions are translucent.
2. Add tomatoes with juice; then beans, oregano and pepper mix well.
3. Simmer covered for 25 minutes, stirring occasionally.
4. Serve over hot rice.

Notes:

Can use precooked chicken sausage and/or use your favorite flavored chicken sausage and cook until browned. Any beans you prefer will do just rinse them.
