Rice and Black Beans

a recipe that serves 6 by me

Ingredients:

2 cups uncooked Minute Rice
2 cups water
1 garlic clove, minced
1 1/4″ thick slice onion, diced
1 tablespoon olive oil
1 can (15 oz) black beans, drained and rinsed
1 can (14.5 oz) diced tomatoes with onion and roasted garlic
1 can (8 oz) tomato sauce
1 teaspoon chili powder
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1/4 teaspoon cumin
1/3 cup Sharp Cheddar cheese, grated

Directions:

1. Prepare water to boil. In a large skillet sprayed with Pam, heat oil and saute garlic and onion until onion becomes translucent. Preheat oven on 375 degrees.
2. Add diced tomatoes and tomato sauce and mix well. Stir in chili powder, garlic powder, pepper and cumin. In the meantime, when water is boiling stir in rice, remove from heat and cover for 5 minutes.
3. Add beans and stir; heat until slightly boiling. Remove from heat and mix in rice. Spray a glass or ceramic, approximate 9 x 12 baking dish with Pam, add mix and stir in cheese.
4. Bake uncovered for 20 minutes and let set 10 minutes before serving.
