Salpicao Jalisco

Ingredients:

1 1/4- 1 3/4 pound of either top round or chuck stew meat cut in 3/4 inch cubes
2 1/2 bulbs of garlic, peeled and sliced
salt and pepper to taste
1/2 teaspoon hot pepper sauce (like tabasco)
2 tablespoons light olive oil
2 tablespoons of flour
almost 1 cup of warm tap water

Directions:

1. heat oil in large skillet on medium heat, fry garlic until it begins to turn golden brown, remove it from the pan with a slotted spoon and set aside.
2. add beef to hot oil and fry until browned on outside, season generously with salt, pepper and add the hot sauce.
3. return the garlic to pan and cook meat until it has reached your desired degree of done. (It is best at medium to medium well done) then remove the beef to serving dish with a slotted spoon.
4. mix flour with tap water (Optional- add dash of hot pepper sauce to water -like to shakes) and pour over drippings in pan stir smooth and simmer over medium heat until thickened; pour over beef in serving dish and serve over white rice.
