Salsa Chicken Burrito Filling

Ingredients:
3 boneless, skinless chicken breast halves
1 15oz can tomato sauce
1/4 cup all natural mild salsa
1 package of taco seasoning mix
1-2 teaspoons ground cumin (cumino)
2 minced clove of garlic
1 teaspoon chili powder
optional: hot sauce to taste
Directions:
1. Place chicken and tomato sauce in a medium sauce pan over medium heat and bring to a boil.
2. Lower heat add salsa, taco seasoning, cumin, garlic, chili powder and simmer for 15 min.
3. With a fork and knife start pulling chicken meat apart, like shred into thin strips.
4. Keep cooking covered for 10-15 min. (add hot sauce if using; add a little water if mix is a bit too thick.).
Note:
You may need to add a bit of water if the mixture is cooked too high and gets too thick.
“Quick, easy burrito/taco filling that is delicious and freezes great! I serve this with tortillas, shredded Cheddar cheese and little sour cream. You could fill the tortillas and put them all in a baking dish and then cover with salsa and cheese and bake for about 10 minutes, if you don’t want a mess at the table.”
If making Burrito’s I used:
Ingredients:
2 cans of 15 oz tomato sauce
1/3 cup salsa
1 ½ teaspoons chili powder
also you will need,
1/4 cup of grated cheese- cheddar, mex mix, Monterey Jack
1-2 burrito wraps or your favorite wraps per person
1 Tablespoon mild Taco sauce
sour cream
Directions:
1. Stuff burrito wrap shells, leaving some gravy behind in pan. Place stuffed shells in a grease pan.
2. Cover burritos with excess gravy, drizzle taco sauce on them and sprinkle cheese on them. Cover and bake in a preheated oven at 350 degrees for 10 min.
3. Serve with sour cream.
