Sausage, Peppers and Onions

a recipe that serves 3-4 by me and the family

Ingredients:

7 sweet Italian sausages
1 large onion, skin removed, halved lengthwise and each half cut into 6 wedges
3 large bell peppers- green, red, orange or a mix; halved and seeds removed
water
Optional:
1 can peas, drained

Directions:

1. Fan onion wedges into individual slices, place in a microwaveable soup dish and cover with plastic wrap. Microwave on high for 2 1/2 minutes. Leave cover on when done.
2. Cut pepper halves into 1/4″-1/2″ slices, place in a microwaveable soup bowl and cover with plastic wrap. Microwave on high for 6 minutes. Leave cover on when done.
3. Cut each sausage link into 4-6 slice, trying to get as close to 3/4″ slices.
4. In a large skillet sprayed with pam, add a bit less than a 1/4″ of water and sausage, cook on medium heat covered for 10 minutes. Uncover onions and peppers and drain excess liquid from peppers.
5. Uncover sausage and turn each piece. Cook uncovered on high evaporating remaining water while occasionally turning sausage.
6. With barely any water left in pan, lower to medium heat and stir in onion until just beginning to brown. Approximately 3-5 minutes.
7. Stir in peppers, cook until peppers are softer while stirring occasionally. Approximately 20 minutes. If adding peas, stir in 10 minutes after peppers.
8. Turn heat up to medium high, cook for another 10 minutes browning peppers and sausage (even peas) a bit, onions should be caramelized some.

Notes:

Serves nice with a baked potato or garlic bread and a fresh salad.
