Scallop Bake

a recipe that serves 2 by Mz. Gina’s Mom

Ingredients:

1-1 1/2 lbs of small scallops rinsed and dried
1 tablespoon of Canola oil
1/4 teaspoon sea salt
2 tablespoons seasoned bread crumbs
1/8 teaspoon onion powder
1/8 teaspoon black pepper
1/4 teaspoon garlic powder
1/2 teaspoon dried parsley
1/4 teaspoon paprika

Directions:

1. Preheat oven 350 degrees.
2. Mix oil with scallops, sprinkle sea salt on the scallops and mix well again.
3. Mix bread crumbs onion and garlic powder, pepper and parsley.
4. Spray a 8-9″ pie pan with pam and place scallops in the tin single layer and sprinkle a light even coating of bread crumb mix on top of the scallops.
5. Sprinkle paprika on top of the bread crumb mix.
6. Bake for approximately 20-25 minutes, scallops should be white and not opaque.
