Simple Spinach Salad

a recipe that serves 2 by me

Ingredients:

2 cups baby spinach (substitute whole leaf spinach cut bunches into ½” slices), divided in half
1/2 cup garbanzo beans, divided in half
1/4 cup dried cranberries, divided in half
salad dressing (your favorite)
Optional:
1 tablespoon sliced Almonds, divided in half

Directions:

1. On two flat dishes spread spinach across.
2. Sprinkle garbanzo beans around each.
3. Sprinkle cranberries around each.
4. Sprinkle Almonds around each.
5. Drizzle your favorite salad dressing, use less than the recommended serving, to complement the flavors of the salad not drown them out.

Notes:

This is my favorite salad to go with dinner, I use Kraft Classic Caesar or Oil and Balsamic Vinegar Salad Dressing. Look under Salads in The Recipe Box for the Olive Oil and Balsamic Vinegar Salad Dressing recipe.
