Simple, Sweet Acorn Squash

a recipe that serves 2 by me

Ingredients:

1 acorn squash, cut in half lengthwise, seeds removed
2 tablespoons butter, butter substitute
1/8 teaspoon Salt Sense table salt (33% less sodium), if using butter substitute
1/8 teaspoon ground black pepper
1/8 teaspoon nutmeg
1/4 teaspoon Splenda brown sugar mix
1/4 teaspoon ground cinnamon
water

Directions:

1. In a deep dish that fits squash halves next to one another put 1/4″ deep water, and place acorn halve in it face down next to each other. Poke holes through skin on top.
2. Place in microwave on high for 8 minutes or until fork soft.
3. Sprinkle with salt, pepper, nutmeg, brown sugar and cinnamon equally between the inside of the two squash halves. Then add, 1 tablespoon of butter to each have.
4. Broil the acorn squashes face up for 3 minutes, butter should be completely melted.
