Spaghetti Squash
a recipe that serves 4 by
Ingredients:
1 medium to large Spaghetti Squash
water
Optional Toppings: Spaghetti sauce/gravy with Meatballs, Butter or Butter and Garlic
Directions:
1. Wash squash shell and pull off stem, if any. Cut squash in ½ long wise and stab shell poking holes in the shell on both halves.
2. In a microwaveable (oval) platter with a lip put a 1/4″ of water and place one half of squash with shell side up onto the platter. Cover and completely seal with plastic wrap.
3. Cook on high in microwave for 10 to 12 minutes, but check after 6 to 7 minutes, you are looking for the shell to be soft if you press on it. If soft after 10 to 12 minutes let it stand as is while you cook the other half. If hard microwave on high for approximately another 3 to 5 minutes.
4. Let second half stand while you scrap out the first half. Remove plastic and let steam out. Using a paper towel turn squash upright and spoon out seeds and discard. Scrap squash out into a bowl with a spoon or a fork down to almost 1/8″ of the shell is left. Repeat to the second half of squash.
5. Like any other spaghetti add your favorite topping.

This is great as man dish or a side dish.
