Stewed Tomatoes

a recipe that serves 8 by me

Ingredients:

3-4 large cloves garlic, diced
1 1/2 tablespoons Canola Oil or olive oil
2 15 oz cans of diced tomatoes
4-6 oz tomato sauce (your own or canned)
1 teaspoon dried basil
1/4 teaspoon pepper
1/8 teaspoon dried oregano
1 tablespoon and 2 teaspoons, separated, Locatelli or Parmesan grated cheese
salt to taste

Directions:

1. Heat oil in deep frying pan.
2. Saute garlic until just before browning.
3. Add tomatoes and sauce.
4. Bring to a boil and boil for 10 minutes, while adding basil, pepper, oregano, salt and 1 tablespoon of grated cheese.
5. Simmer 20-25 minutes, uncovered.
6. When done top with remaining grated cheese.

Note:

Serves well alone or with crusty bread. Also is a great side with meatloaf or sausage.
