Sunday Meatloaf

a recipe that serves 6 by me

Ingredients:

1 1/2 meatloaf mix or mix it yourself (1/2 lb ground beef, 1/2 lb ground pork, 1/2 lb ground veal)
1 beaten egg or egg substitute
1 cup of seasoned bread crumbs
1/4 cup Locatelli or Romano grated cheese
2 tablespoons ketchup
2 1/4″ slices onion, chopped small
1 1/2 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon ground white pepper
1/2 teaspoon paprika

Options: (pick one)
1 can of peas, drained
2 small squash, yellow and/or green cut into 1/4″ slices
6 medium potatoes already cooked, cut into 1/4″ slices

Directions:

1. Preheat oven to 375 degrees.
2. In a large bowl mix meatloaf mix, egg, bread crumbs, grated cheese, ketchup, onion, white pepper, 1 teaspoon garlic and onion powder.
3. Spray a large baking pan with Pam, shape mixed meatloaf into a loaf making it even in height and width. Place the loaf into the pan, cover pan with foil and cook.
4. Cook for 45 minutes and add one of the options to the pan mixed with the remaining garlic powder and paprika. Cover and cook for 10 minutes. Re-mix option in the pan, cover and cook for another 10 minutes.
5. Let meatloaf stand uncovered for 5 minutes before cutting.

Notes:

Jazz it up by adding 16 oz of left over Sunday Italian Gravy (see in The Recipe Box under Gravies and Rubs for the recipe), a can of tomato sauce, or a can of crushed tomatoes, when adding whichever option you have chosen, make sure to pour it over the meatloaf not just what you chose to cook with the meatloaf.
