Super Humus
a recipe that serves 6-8 by
Ingredients:
2 cans (15 oz) garbanzo beans, drained, 1 can of liquid reserved – approximately 4 tablespoons
1/4 cup slice Manzanilla olives
3 crushed cloves garlic
1/2 teaspoon dried parsley flakes
1/2 teaspoon white pepper
1/2 teaspoon paprika
2 teaspoons ground cumin
3 tablespoons olive oil
2 tablespoons lemon juice
Directions:
1. In a small dish blend parsley, pepper, paprika and cumin.
2. In a blender, food processor or medium food chopper add one can of beans, olives, garlic, lemon juice, small dish of spices and olive oil. Blend on low.
3. Gradually add in other can of beans, blending on low. Gradually add reserved bean liquid until desired humus consistency is obtained.
Note:
Serves great with crackers like Special K (17 crackers for 90 calories) or pita bread or pita chips.
