Sweet Potato Potato Salad

a recipe that serves 4 by me

Ingredients:

2 medium potatoes
3 medium sweet potatoes
1 hard-boiled egg, chopped
1/2 cup light mayonnaise
1/2 tablespoon prepared deli mustard or deli mustard with horseradish
1/4 teaspoons ground black pepper

Directions:

1. Boil potatoes in a large pot of water and cook until fork tender, but still firm. Approximately about 30 minutes. Drain and cool potatoes, peel the sweet potatoes and chop or slice all the potatoes.
2. In a large bowl add potatoes, mustard and mayonnaise, mix well. Add egg and pepper and mix well.
3. Refrigerate and serve chilled.
