Three Bean Chili

a recipe that serves 4-6 by me

Ingredients:

1 – 1 1/2 lbs. lean ground beef (can substitute ground pork, chicken or turkey)
2 cloves garlic, minced
2 1/4″ slices onion, chopped finely
1 1/2 -2 cups tomato sauce (homemade, jar or can)
1 can (14 oz) black beans, drained and rinsed
1 can (14 oz) Cannelli beans, drained
1 can (15.5 oz) Garbanzo beans, drained
1/2 teaspoon white pepper
1/2 teaspoon garlic powder
1 teaspoon cumin
3/4 tablespoon chili powder

Directions:

1. In a large frying pan sprayed with pam, crumble and brown meat. Drain off any excess grease.
2. When meat is almost cooked, add garlic and onion, mix and cook for 2 minutes more.
3. Add tomato sauce and all the beans, mix and bring to a boil.
4. While boiling stir in pepper, garlic powder, cumin and chili powder. Lower flame and let simmer for 40 minutes. Stir often.

Notes:

Garnish with sprinkling of grated cheddar, a dollop of nonfat sour cream, sliced hot peppers. Serve plain, with rice or in a hollowed small round bread. For hotter chili add 1 tablespoon of chili powder instead of 3/4 tablespoon, add up to 1/4 teaspoon cayenne pepper or 2-4 drops of hot sauce.
