Warm Steamed Zucchini Salad

Ingredients:
5 medium zucchini (approximately 5-6 inches long), sliced into 1/4″ slices
2 teaspoons salt sense table salt (33% less sodium)
1/4 teaspoon ground black pepper
1-2 tablespoons olive oil
water
Directions:
1. In a microwaveable steamer with basket, add salt to enough water so to cover the bottom of the steamer and approximately 1/2″ up into the steamer basket.
2. Add zucchini, place cover of steamer to lay on top of steamer not snap shut, covering the entire top of steamer bowl. Microwave zucchini on high for 6 minutes, then mix the zucchini and steam an additional 4 minutes on high. Leave set for 5 minutes before removing zucchini. Steam will come pouring out when removing cover.
3. In a large bowl place zucchini, olive oil and pepper. Mix well. Serve hot, warm or room temperature.
Notes:
For a variation when adding the pepper add a 1/2 teaspoon garlic powder, or add 1/2 cup of cherry or grape tomatoes. Add both!
