White Bean Dip

a recipe serves 6-8 by me

Ingredients:

2 cans small white beans (Habchuelas Blancas)
5 tablespoons of olive oil
4 tablespoons of lemon juice
1/2 teaspoon ground black pepper
1/4 teaspoon salt

Directions:

1. In a blender, food processor or medium food chopper add one can of beans, lemon juice, salt, pepper and olive oil. Blend on low.
2. Gradually add in the other can of beans, blending on low. Consistency should be smooth and thick enough to hug a chip or cracker.

Note:

Serves nice with vegetables and vegetable side dishes.
