Zucchini Fritters

a recipe that serves 6 by me

Ingredients:

1 large zucchini, chopped small and steamed but kept firm
1small onion chopped
3 beaten eggs or the equivalent in egg substitute
1/4 cup grated Romano cheese
1 cup 2% milk
2 cups flour
2 teaspoons dried parsley
salt and pepper to taste
garlic powder to taste
onion powder to taste
1/4 cup Canola oil

Directions:

1. In a large bowl combine salt, pepper, onion and garlic powder, flour, cheese and parsley. Mix well. Add onion, zucchini, milk and egg. Mix well.
2. Heat oil and spoon in with a large serving spoon the batter into the oil. Turn fritters when center appears dry and ends golden brown. Drain on a paper towel when done.

Note:

Serves well hot, warm or cold, as a side, appetizer or lunch.
